Smoking brisket can be an extremely tricky and most disturbing event if not done correctly. I say disturbing because the whole process has completely infuriated me on more than one occasion. Many people, including me, have ruined a perfectly good piece of meat with their own impatience and stupidity. Typically the brisket has not been cooked long enough and will turn out too tough. Or, and worse yet, is that the brisket may be exposed to too much heat over a short period of time and consequently become charred with crispy ends, and nobody enjoys crispy ends, regardless of the topic.
