Whenever someone is cooking any kind of meat there is the issue of whether or not it is frozen. In the case of fish, if the steaks or fillets are frozen a person can actually just throw them right on the grill without defrosting them. This method works best if you plan to bake or fry the fish, for other methods of preparation defrosting the halibut would be a better option. Deciding how to cook halibut is the main thing that will dictate whether or not the fish should be thawed or not. If thawing is the chosen route then it is best to place the frozen steaks or fillets in the refrigerator and allow them to slowly defrost overnight.
